Just like with friend, you don't pay for item specifically, but rather how much you owe in total

After the Deal ends, only assigned RSVP values that the participants (excluding organizer) are used to calculate the fee, the rest will be refunded as credit

you can transition back to Draft and edit it. If there is a participant, you need to cancel the Deal (and tell your participant why, and start another one)

Yes, it is allowed, as long as it is not done to fool the system (make the Deal fee cheaper, etc)
